Stefan is correct – the Drawing Canvas is not a Mac Word component. Just create the illustration then select all of its elements & apply the Group command.

The Drawing Canvas command is likely one of those features that only exist in Word for Windows.

In Word for Windows, go to the Insert tab, and you will find New Drawing Canvas at the bottom of the Shapes drop down.
