This is not a limitation of the Fabric Trial capacity.
Based on your screenshot, you are currently inside the Lakehouse Explorer and looking at a folder under Files. The Get data menu shown there is intended for loading or managing files in the Lakehouse, which is why you only see options such as Upload files, New shortcut, and New subfolder.
A pipeline is a separate data factory item in Fabric and is not created from within the Lakehouse file browser.
To follow the DP600 lab and access the Copy Data experience:
- Navigate back to your Fabric workspace.
- Select + New item.
- Search for and create a Data Pipeline.
- Open the pipeline.
- On the pipeline canvas, select Copy data (or use the Copy Data Assistant, depending on the current Fabric UI experience).
- Configure your source and choose the PAYMENTS Lakehouse as the destination.
Fabric documentation confirms that pipelines are created as workspace items and that copy operations are performed within a pipeline rather than from the Lakehouse Explorer->

One additional point: many DP600 training materials and screenshots were created using earlier Fabric interfaces. The Fabric UI has evolved considerably, so the steps and screen locations may look different even though the underlying functionality remains the same.
