Modify the Caption paragraph style. In the Apply Styles pane (Ctrl+Shift+S), type in Caption and click Modify. In the dialog box, make the desired changes. Basic settings such as font and point size are exposed in the dialog box (and you can get access to more settings via the Format drop down). If you want to update the Caption style for all future documents, do the following: Before you OK out of the dialog, select "New documents based on this template." Later, if/when you are prompted to save your template, choose to do so.
