Option 1: Inventory Blocking (Best for "Pure Holds" & Internal Reservations)
This is the intended and proper way to reserve inventory against customer orders or other demand. Configuration:
-Accounts receivable parameters > Sales default values > Reservation = Automatic or Manual.
-Item model group > Inventory policies > Item sales reservation = Automatic or Manual.
-Enable Reserve ordered items (Inventory and warehouse management parameters) if you want to reserve against future receipts (not just physical on-hand).
-On a sales order line > Inventory > Reservation (manual) or it happens automatically.
This creates a hard reservation (Physical reserved or Ordered reserved) that prevents other documents from using the stock. Use this when there is genuine customer demand or a committed order.

Option 2: Standard Sales Order Reservation
This is the correct native feature for holding inventory without creating a sales order. Prevents physical on-hand inventory from being reserved or issued by other outbound documents (sales orders, transfers, production, etc.). How to use it:
Go to Inventory management > Periodic tasks > Inventory blocking > Select New > Enter:
-Item number
-Description
-Quantity to block
On the Inventory dimensions tab, specify Site and Warehouse > (Optional but recommended) Set an Expected date — when the hold should be released > Save.
The system creates a blocking transaction (status becomes Reserved physical). The inventory is now protected and simply update the Expected date.
