I was just wondering where does Microsoft Edge store the favourites?

For the Default profile it will be

C:\Users\[your username]\AppData\Local\Microsoft\Edge\User Data\Default\Bookmarks

To go to the containing folder, open the run box (Win key + R) and paste in

%localappdata%\Microsoft\Edge\User Data\Default

Microsoft Edge stores Favorites locally in a file named Bookmarks inside the browser profile folder. The default location is:

C:\Users<Username>\AppData\Local\Microsoft\Edge\User Data\Default\Bookmarks
