As far as I know I'm not using any of the forbidden tricks like a VPN or automated searches. I tried it with Bing, MSN and Edge on iPhone, iPad and Android phone. The only thing I get on them is the 'Read to earn' thing. I'm at a loss here?

It´s happens to me the same thing i can´t get any of them to work, always appear "2 activities needed" but i do search on bing with my account (the only one i got) and search everything i could but it always appear in "ZERO" the bing search streak, before a month i could do it but now i can´t

Hello, good day and thanks for your question. My apologies and I understand that you have encountered an issue with regards to not being able to get the full 7 days activities in Microsoft Rewards.
May I check and confirm if this is for all of them or there is only a specific activity to which this is happening?
All three of the 7 days activities show 'Not started' (there is no option to start them) - the 14 days activity shows 'In progress'.
The 7 days activities has their own set of how it can be completed and you may also refer to the below for this.

If these has been done or fulfilled and you still encountered an issue, you may submit a ticket via https://rewards.bing.com/support for this to get checked internally by the rewards team.
