How to make touch keyboard not displaying zhuyin?

I understand how frustrating it can be when using your Surface Book in tablet mode, the touch keyboard displays the Zhuyin layout, but you would like to use a QWERTY keyboard layout to enter Chinese with Pinyin instead. 

Before proceeding, I'd like to clarify a couple of details:  

• Are you using the Chinese (Traditional, Taiwan) keyboard or the Chinese (Simplified, China) keyboard? 
• Does the QWERTY layout appear when you tap the keyboard options icon on the touch keyboard, or is only the Zhuyin layout available? 

In the meantime, you can try these workaround steps below to troubleshoot the issue:  

Option 1: Check the installed Chinese input method  

• Open Settings > Time & Language > Language. 
• Select your Chinese language and click Options. 
• Review the installed keyboards. 

Option 2: Add the Microsoft Pinyin keyboard  

• Under the Chinese language options, click Add a keyboard. 
• Select Microsoft Pinyin if it is available. 
• Switch to this input method from the language indicator on the taskbar. 

Option 3: Remove the Zhuyin keyboard (optional)  

• In the same keyboard list, select the Zhuyin keyboard. 
• Choose Remove if you do not need it. 

Option 4: Restart the device  

• Restart Windows after making the changes and check whether the touch keyboard now opens with the QWERTY layout.
