I'm over 18 and I'm trying to send messages in the game but I can't. I've watched many videos, but the adjustment option is grayed out and I can't adjust it.

Is the birthdate info correctly reflecting that you are an adult?
If not, you have to do this to correct it:

Follow the section - I am an adult, but Microsoft thinks I am a child.

Are you saying your Microsoft profile's birthday information is correctly reflecting 24? How old you actually are is not the issue here, the profile's birthday information needs to reflect that.
The information was incorrect, that's why I needed to correct it.
Then the instruction I gave you was correct..
You basically need to create another account with adult birthday, then invite your account to join the new account's family group. and use the family organizer's account to change your birthday.
Create a different Microsoft account. Sign into a different Microsoft account whose date of birth indicating an adult user. If you don't have one you can use, you can create a new one just for this purpose for now. It will prompt you to sign in, and give your account consent, and join your family group. Once joining the new account's family group, go to https://account.live.com/mykids.aspx sign in with the new account (adult one), you should see your "child" account listed. Click on "Edit this child's personal info" And it will let you update the date of birth for this child user.
Once updated, you can then use the "Remove consent for this child's account", then go back to the family safety page, click on this child account and choose "remove from family group".
I don't think you are following instructions correctly.
Are you currently in a family group?
If you go to https://account.live.com > Family, what does it show?
Does it say Daniel Manea is the family organizer? Only this person can change your birthdate.
Then you need to contact support in this case.

In the link above, search for "family safety". On the next page, scroll to the bottom and use "Contact support"
On the next page, choose "Windows" from the drop down menu. On the next page you will have option to chat with support.
