Just get rid of the default APTOS on outlook. Stop making defaults we do not want.

Aptos is now the default font across all of Microsoft Office, including Outlook. To stop using Aptos in Outlook, change the default font for email messages to a different font.

Use the Outlook font settings for email (for example, set Calibri, Arial, or any other installed font as the default) by following the guidance in the Outlook font article referenced below. Once a different default font is chosen, Outlook will no longer use Aptos for new messages, replies, or forwards.

If managing multiple devices or users, administrators can also control default fonts for Word, Excel, and PowerPoint via the documented admin methods, while Outlook’s default font is managed separately through its own settings.
