Copilot's safety limits make no sense in image creation

Copilot generated excellent images from written descriptions for a few days then began playing up and has just now refused to generate an image of a centaur on safety grounds despite having generated many such images for me.
It also refused to change a very innocent image of a monk by making his hair longer and his face more handsome - again on safety grounds.
The style of the images generated has changed and is now much less lifelike despite me asking for very realistic images like photographs or movie stills.
The images resemble more illustrations for a children's book.
I have not asked it to change the style. It just did it.
