MacBook, VSCode use .mobleconfig file to update ExtensionGalleryServiceUrl not working

We try to update the VSCode extension marketplace URL on macOS. We follow Enterprise Policy mention https://code.visualstudio.com/docs/enterprise/policies

We use ".mobileconfig" that comes with VSCode, we update the value of <key>ExtensionGalleryServiceUrl</key>, then deploy using JAMF. Once deployed, restart VSCode, but VSCode sill use the value from product.json ignore the value in ".mobileconfig"

Can you let us know what is the right way to deploy VSCode in MacOS.
