I am seeing mixed information that Copilot has the capability to search for emails in Outlook. If our administrator enables Copilot mailbox access, will it be able to perform the search functionality?

Yes, if your administrator enables Copilot mailbox access, Microsoft 365 Copilot will be able to perform search functionality for emails in Outlook. Copilot utilizes Microsoft Graph to access and reason over the data you have permission to see, which includes emails, chats, and other information within your Microsoft 365 environment. Therefore, with the appropriate permissions set by your administrator, Copilot can help you search for emails effectively.
