I want to get rid of 365 completely (I'm retired and don't need all the bells and whistles) and go back to using office 2019. Will I be able to work with the 365 files with the 2019 version if I uninstall 365?

If you cancel your subscription to Microsoft 365, you should still be able to use Office 2019 for your documents since the file format is the same. But if some of your documents are stored on OneDrive, you will want to download them to your hard drive (to a folder that is not synchronized with OneDrive) before quitting M365 since you will likely have less OneDrive storage (or possibly none).

On the same device, you mean? I am not sure. You can try (be sure to install the oldest version last).

Hanging on to the subscription would require that you continue paying for it regularly, of course. A perpetual license will be a lot cheaper, since it is a one-time payment.

Since Office 2019 is out of support, getting Office Home 2024 might be a better alternative for a one-time payment license. It is for one user and one PC (keep in mind that classic Outlook is not included).

If you are subscribed to Microsoft 365 Personal or Microsoft 365 Family, note that these versions let you install the full Office apps on a PC (or Mac), so there is no reason to try and keep Office 2019 installed on the same machine.
