I cant find the option to remove daily wallpapers, and no it isn't anywhere in the appearance settings. I search through every tab in the appearance settings and it doesn't show ANYTHING related to the daily wallpaper.

You turn it off on the New tab page itself, not in Settings > Appearance.
Open a new tab in Edge. Click the gear icon at the top right called Customize. Choose Custom. In the Background section set it to Off, or turn off the Image of the day switch. If you still see a background, change Layout to Focused, then go back to Custom and confirm Background is Off.
