The windows.old folder is not showing in system/storage/temporary files so I am unable to include it for deletion. I am on the Canary channel. I have tried clicking Refresh to no avail.

This is listed as known issue and MS is working on it.
You can use old Disk Cleanup tool to delete previous Windows installain files.
Start Disk Clenup and select Clean up system files
Thanks Pauli, I had forgotten about the Disk cleanup utility.

Disk Cleanup can be also used to clean the old drivers that don't show up anymore with:
Settings > System > Storage > Temporary
