I understand your concern and I would like to convey that I have tested the behavior in the latest version on the PowerPoint application on the iOS device, where I am able to resize the objects inserted in the presentation without any issue.
Since you have found similar thread where some users are having the same issue, I have checked the service health dashboard at the Microsoft end, where there is no related incident reported.
In this situation, I would like to suggest you try resetting the PowerPoint app on your iOS device and check the outcome:
Quit the PowerPoint app> Open the iOS Settings> Scroll down to Microsoft PowerPoint> Click on Reset and enable all options> Restart your iOS device and check the outcome.
If the same problem happens, then I would like to request you to report the behavior to the related PowerPoint development team via adding the feedback in the PowerPoint app on your iOS device: How do I give feedback on Microsoft 365? - Microsoft Support
Moreover, if you are having the opportunity to connect with the IT admins of your organization, I request you to connect with them and ask them to raise a new service request from the Microsoft 365 admin center, so that related development team will connect with you via phone or preferred contact method and collect the related logs to investigate the issue further.
