I work with a document some others has created. In the document Enter has been jused quite many times to create/start a new line. When I use Backspace or Delete to remove the line and tie the sentencens together and then add a space between the sentences, then the cursor jumps all the way to the end of the document.
When a turn off Track Changes, then it does not happen. I would assume this to be an error/flaw i MS Word and wonder if it is a workaround for the issue or if it would be fixed. I need to have Track Changes enabled.

I am experiencing exactly the same problems as AverillBuchanan. A fix would be much appreciated. It is very, very annoying!
I work as a professional editor and this has been an issue now for about a month. It is extremely irritating when working on a long document. (It's been happening to other colleagues too. Your ears have probably been burning!)
It happens on many Word documents, whether I create them myself or receive them from others. When tracked changes is on and I want to edit the last line in a paragraph, the cursor jumps down to the end of the document. When I go back to the paragraph I was editing, the line I had been working on has disappeared. To see it again, I have to toggle between All Markup and Simple Markup.
It's random, in that it doesn't happen at the end of every paragraph.
It's a bug in Word and it needs to get sorted out.

I'm working in Word (Office 365 subscription) on a Windows 10 PC (up to date). My Microsoft 365 Apps for business build is 16.0.13801.20360 and seems to have been last updated on 22 March 2021 (UK).
