When I try to copy and paste text from the OneNote mobile iOS app to the Messages app, it pastes an HTML file with the text instead of only the text. This is a new issue. In the past, I was always able to copy text from OneNote, and paste the text to the Messages app. I cannot find any settings in the OneNote app or the Messages app that would seem to help.

I’ve been having this issue for over a year as well, on two different iphones. Copying to another app and repasting into iMessage is a pain. This used to work fine a long time ago.
I would imagine this is a safety net to ensure that all text, and an inserted photos or documents are included when sent. There are numerous other threads of complaints "OneNote not copying pictures" or the such.
My recommendation is that if not multi-media is detected, then the text can simply be copied as Rich Text, and not combined into a sperate HTML document. Otherwise, it can default to HTML document conversion.

I tried your suggestion and it didn't work. BUT ... it inspired me to go another route, which
—alas!—has solved the riddle.
Here's the workaround ...
When highlighting copy from OneNote, you're provided five options as a next step: CUT, COPY, SELECT ALL and PASTE. It's in the fifth option—SHARE—where the solution is found. After you’ve highlighted whatever it is that you want to transfer, rather using the COPY or CUT functions, go into the SHARE menu. Here, you'll find icons of all the other apps on your phone, one of which is iMessage.
Click on the iMessage icon, and you’ll see the blank message box come up with the PASTE option. Then—viola!—drop in your text and hit SEND.
That’s it.
While there is more navigation with this process, it’s negligible.
Again, thanks for your response. Now, to the chagrin of my colleagues, I've turned into a Text Message Monster :-)
This is a known issue with OneNote for a long time. People have been posting for years about this, so why is Microsoft telling you to contact Apple? More importantly, why don't they fix this known issue?
