The problem occurs under any front and any zoom I am using.
I just updated Office 365 to the latest version (1701) before posting this question and the problem still remains

Try going to Display Settings>Advanced scaling settings> and creating a custom scaling for 5% more than what it is currently set at.
Thanks, I haven't tried that fix. I can reliably get it back with a reboot.
BUT: if I were a programmer working on this, that fix would be a clue, I think.
In my case the bug is triggered when I click on a hyperlink in an email in Outlook, in cases where the hand mouse icon appears to have shrunk. So, I bet it's something with some variable that rescales cursors being set, and that the italics cursor in Microsoft word doesn't handle rescaling properly, and the custom scaling forces a reset.
That's a bet.
My other bet is no one is working on this. Software is getting to the point where it is too complex, and leads to unexpected results, in some subset of cases. And nobody gives a damn if it ruins your particular life, b/c there are millions of other users who are not affected.
Are you using the touch mode for Office?
Another thing that I did was to disable it. Seemed to causes some issues as well.

Its ridiculous that we have to do it but you can get the cursor back by closing all office products and reopening your word document. I found this after having the issue on a surface pro 4 with Windows 10 and office 2016 with a 27 inch hp monitor. None of the solutions posted worked. I did not reboot because that changes too many things and I would like to isolate the issue.
I had an instance of Excel open that I closed. I cannot replicate the issue on demand (I did not try very hard).
Agreed. I did find that if I click on a NON-MICROSOFT program window and go back to Word, I get the cursor back. Unfortunately it disappears shortly thereafter again.
Beside the disappearing Cursor, I am also experiencing bizarre window sizes opening two screens wide on a single screen, not even close to where the second monitor is. I am guessing it's something with a program change that the video can't interpret or the program itself is misreading.
If I was still supporting Fortune 100 executives, I can't imagine what I'd do! There's no valid work around that doesn't negatively impact productivity.
