A family of Microsoft word processing software products for creating web, email, and print documents.
If you just want to see how the book (facing pages) will look when made into a book (whether or not you're using "Book fold"), you can do this in Print Preview. If you add the Print Preview Edit Mode command to the Quick Access toolbar, you can get the "classic" Print Preview, which allows you to edit the document (you have to disable the magnifier).
You can easily get a two-page spread in Print Preview; to get facing pages, you have to have enabled either "Different Odd and Even" for headers and footers or "Mirror margins" (or both), either of which will indicate to Word that you intend to duplex the document.
