I am trying to copy a long list of file names in file explorer and paste them into excel so I can keep track of file status, is there an easy way to do this?

The easiest way for me is:

    1. Select the files from Explorer you wish to copy the path/filename.
    2. Press and hold <Shift> and right click
    3. Select "Copy as Path" when prompted.

Then all you have to do is open notepad, excel, etc and paste it in.  This option is smart enough to put quotes around the filename.
