EVERY SINGLE TIME I open a document created with Mac Word 2011 I get the Final Showing Markup version. I don't WANT to see all the changes. But no matter how many times I try to save the document with Tracking set to Final and/or the Show Markup categories unchecked, it still opens the next time with all the stupid changes showing in red—Tracking set to Final Showing Markup and every Show Markup category checked. (Tracking is turned OFF, so I can't even see why it's keeping that information.)
And there is no way in Preferences to set this, either. Just "how do you want the changes to look?", not "do you even want to see the @#$% stupid changes in the first place?" !!!!!!!!!!!

You've got to Accept or Reject All changes ... that's the only way they disappear.
Keep Tracked Changes turned off and if you do need to see "what's different" between two versions of the same document, investigate the Compare Document feature.

Go into Word menu > Preferences > Track Changes, then untick 'Use balloons to display changes'. To see comments and change, click on View menu > Sidebar > Reviewing pane.
TRY THIS
Go to your menu at top of screen.
Select Word/Preferences/Security" ..
Click UNPROTECT DOCUMENT
If your document was not allowing you to ACCEPT CHANGES and it was grayed out...this should fix it.
Make sure you make sure all these settings look like this:
SAVE
CLOSE
REOPEN to CHECK
...then thank your mac goddess and send her chocolates!!! 65% cocao or higher! The goddess will be pleased and will offer more enlightenment to your lives!

NOTE Change tracking is available only in shared workbooks. In fact, when you turn on change tracking, the workbook automatically becomes a shared workbook. Although a shared workbook is typically stored in a location where other users can access it, you can also track changes in a local copy of a shared workbook.

Do a "Maggie" on the document:
1. turn on hidden characters the ¶ button.
2. click at beginning of document.
3. scroll to end of document
4. click just before the last ¶.*
5. now do a copy (⌘-C)
6. open a new blank document
7. now do a Paste (⌘-V)
8. now save document with a slightly different name (example: letter.docx would become letter1.docx
This should correct any corruption.
