How do I get the classic Excel menu back in Excel 2010

1.5 years later, I still sympathize with the old codgers, but the refusal/reluctance to relearn (and the need to handle legacy users) is a hindrance to product development in more ways than one.

I am an 'old codger' myself, though probably not as much a power user as some others here.  Until 2010 I was using MS Office 2000 and WordPerfect 2000.  I still use WordPerfect where I can (functionally better than Word!...) but I found the new ribbon interface of Office 2010 much more pleasant and easier to use than the old version.  And I like it when other apps emulate it, one example being Nitro PDF Reader

To gain space on the screen one can easily close the ribbon.

I found the MVP Graham Mayor's responses in 2010 perfectly reasonable and not all arrogant.  I wonder how many of the opponents feel now., in 2013...

I'd like to know how to make the window header dark like other XP windows in "Classic Windows scheme."

"I do NOT want to learn ....... " is part of the problem here. I learnt on the 2003 version too, but I got changed over to 2007 when my computer went for repairs. 

Here's what I used during the transition. It will show you where to go in the 2007 version when you click your familiar command on a 2003 dummy screen.

The new ribbon based user interface for MS office 2007 in my opinion is completely awful.. Wont argue the point about new users but what about existing users???? It was completely rediculous to release the new user interface without at least supporting a classic menu add on for those who where already accustome to using the older verision... UNBELIEVABLE... Speaking from experience I honestly tried using ribbon system for a couple months hated so much I simply went back to the old version ... It was nothing short of infurating being forced to relearn the whole system.. If you could calculate the lost productivity in the work enviroment globally from that transition the figure would be astronomical to say the least.. Someone at MS should have **** kicked in for that goofff.. Gates is genius but he should have never let something like that slip by.. occasional change is a good thing but this was very radical too much too fast too soon... not even sure how the ribbon escaped the beta or market testing... guessing they didnt even test the market b/c no one with any sense would have accepted something that dramatic..
