Same issue for me. Switch to Classic Outlook > Provide feedback > Hit button > Outlook closes > Only option is Outlook (new). Thanks Microsoft.
I have tried the toggle switch and I answer a few questions and then it acts like it is going to open Classic Outlook and then just does nothing...
I actually found how to install Outlook Classic and I'm back up and running. I bookmarked in case it actually worked, so I could share it here. :)
Outlook for Windows (classic) - Download and install on Windows | Microsoft Store
I closed the Outlook (New) and installed this version. Then opened it up from the Start Menu and all is good now.
Hope this works for everyone else.

I solved the problem on my PC by deleting the new Outlook then rebooting and reinstalling the classic Outlook.
Toggling off the New Outlook does NOT work. Instead, a feeback windows appears asking why I want to switch back. Whether or not the form is filled Outlook just disappears altogether. Trying it again repeats the same loop.
