How do I TURN OFF the "Summary by Copilot banner that appears on every single email I receive in outlook?
I may, maybe once a year when tagged into a super long email thread try to get a summary... but 99.99% of the time I will never want to use this, as such the banner is annoying and consumes lots of valuable space where I could render my email.
How can I turn this off? or hide it by default?

I managed to do this as follows
In outlook go to
Settings
Select General
Select Privacy and Data
Select Privacy settings
Select Connected Experiences
Toggle off experiences that analyse your content.
For me it stopped the co-pilot icon appearing on the banner and in new emails or replies.
I was following this thread when someone posted a solution on another thread for removing CoPilot banners and widgets that interfere with using Outlook webmail. It requires downloading the extension uBlock Origin which is easy to find using google.
I'm copying it here in case anyone is still looking for an answer. It may not work for everybody but it worked for me and was super easy. If it doesn't work, you can still compose emails from the Draft folder without the widget.
Here is a solution that worked for me to remove that copilot summary banner and to remove the 'try with copilot' when writing a draft.

Here to say the same thing... logged on this morning to face the same unwanted nonsense.
Provide an option to turn it off - it's completely unnecessary to force this on every single email for all users. Overwhelming majority of us don't need it, and the rest of us don't need it on every single email.
I'll uBlock it if I have to, but a proper disable option would be best.
In my case, I have dedicated "Microsoft 365 Copilot" license active with all license features enabled by default.
I was able to "take it away" by unselecting "Microsoft 365 Copilot in Productivity Apps" license.
It may affect other app, not only Outlook (in my case I was focusing on OWA) - I don't really use it anyway.
Great idea, but not an option in a managed corporate environment where other email clients are not allowed. Many users only have Outlook web client as an option, others use desktop thick clients on Windows and Mac.
