In my outlook calendar I can no longer change the date or time of any event using the pull down arrows to change the start date or time. When I input a new day or time, it reverts back to the original. I am able to change the date/time of event by dragging the event, but this is cumbersome. It is a new computer and Office 365. This is a new issue and started approximately 2 weeks ago.

I have been struggling with this issue also. This morning I noticed that Microsoft Teams has been activated on my system. I disabled it and low and behold, Outlook Calendar is working fine.

Thanks for sharing the alternative process you figured out; especially helpful for those without iOS devices. And just to add a lilttle bit of fuel to the fire, on my PC/updated Windows, it now sometimes - but not always - works as originally intended. This makes it more challenging for MS to diagnose and fix, I'm sure.
Amazing that this has not yet been resolved by MS, especially if, as Forest Fox shared, it has been around since 2018!

As a slight variant, I found that it's not even necessary to edit the start and end time in the Scheduling Assistant tab. For me the following also works:
Open the appointment for editing, so we are in the "Appointment" tab. Now flip to the Scheduling Assistant tab and without doing anything there immediately go back to the Appointment tab. Now I can edit Reminder, Start time and End time in the Appointment tab without any issues and save them.
Still annoying that two extra clicks are necessary though!
My workaround, as the problem only seems to show up when using iCloud, is using agenda from iCloud. I have the agenda from Outlook next to Outlook/agenda on my screen. Instead of entering/changing whatever in Outlook/Agenda i enter/change it in iCloud/Agenda. A few seconds later it shows up in Outlook/Agenda.
I installed everything on a new laptop: same problem, same workaround.
And yes, installing 16bit Office365 does not have that problem.
