I want to try the new Outlook, however it is not showing the old emails.

Where did you set this ?
Email settings gear wheel > select the outlook account. It is the third one down under the heading "sync settings". Change "email sync period" to "all time". It was defaulted to like 1 week.

What is strange is that on my gmail account the limitation on the time span mails are shown in the inbox (1 month approx) does not happen.
On my gmail account, also served by new outlook client, there are mails dated back to the beginning of 2024 or even before
Several posts back in this thread, I linked to a thread where a Microsoft-ee reported that this behavior was "By Design". Why they think this design makes sense was not explained.
If your email provider offers a webmail interface, that's one way to see that your older messages are still there (mine are, anyway). You can also use a better client like, say, Thunderbird. Indeed, in that other thread, the Microsoft person suggests using a better, non-Microsoft, email client app if you don't like this behavior of New Outlook. Wow.
