The advanced configuration will allow me to specify an SMTP user name but there is no way to configure the IMAP user name being different from the email-address.

I think you are kidding, right? This is not a feature but the basic email setting functionality. You are forcing people to use new outlook while the basic functions are not ready and telling them this is the "feature", go and vote, maybe you ask us to pay extra for it going further? Not everyone finished IT studies but...
Actually yes, as MS gives a Sh... No option to stay on old Mail and no option to migrate to new Outlook means - check 3rd party such as:
Thunderbird
eM Client
Both are free for private use and another domain MS lost ground for no reason. If you decide for Thunderbird I would also decide for Firefox as browser instead of Edge perhaps thats the way MS will learn better not to push customers to other vendors.
It feels like I'm totally screwed here. I bought a new laptop and New Outlook has told me I am unable to go back to Classic Outlook on a new PC. I am unable to configure an IMAP account due to similar issues described here. Are we essentially being pushed to use a different product for this?
I can't understand why Microsoft are ignoring this issue whilst expecting users to migrate.

Same issue here - shame on you Microsoft. You force the people to move away from "Mail" App in Windows 11 to "Outlook (new)" which is not capable of converting/importing the already configured accounts neither let them be configured manully as you simply ignore that a "Username" or "authentication name" might be different than the Mail address. Prolong the useage of "Mail" as long as it takes you to come out with a working alternative. "Outlook (new)" is not a working alternative, regardless that actually there is no need for you to forward all private mails into Microsoft Cloud. Adding this to you lack of development skills I will switch to "eM Client" - respecting privacy and able to configure correctly.
