I found it in the desktop version under 'Actions' in the ribbon. I couldn't get the screenshot to load here.

So in my research here and getting others advice, there are TWO ways to make yourself a note directly on your email...
(1) On the top ribbon once you have double-clicked your email to OPEN it, click on the three little dots and then select Actions>Edit Message = this will allow you to make a note DIRECTLY @ the top of an email. Just be careful to remove your note when you got to forward the email!
(2) While in your email, click on the red flag and select "Set a Reminder" and where it says "Flag To" - replace the word 'follow up' with your note... this will then appear at the TOP above your email when you are viewing from the pane - and ONLY you will see this (i.e. you can forward your email and no one will see it)
