Using New Outlook on Windows for personal email, calendar, and contact management

I can understand that but now it is January 2025, nine month later and I just happened to fall into this email trap (by agreeing to my 365 to install missing office apps, not by agreeing to a preview version). All PSTs disappeared, POP mail-accounts not transferred to new outlook. Only my outlook.com mailbox worked. All others IMAPs require my consent to upload into the MS cloud.
How can such lousy half cooked software find its way arount the test engineers into the market? I didn't ask for being a guinea pig (though I accept it more or less voluntarily to a certain degree)! But this goes beyond any limits I was used to. I must say I'm beyond pi... angered. I'll invest now some effort to get things fixed back to normal and if that means I have to change my favourite office and software supplier to a more trustworthy one then so be it.

I tried switching back to classic outlook but it only switches back to new outlook in classic view. Still no pst or my beloved mailboxes and no idea where the "file" menu is and where I could set out of office replies ... and how to access psts. Aaawwwrgrgl ...
