Why can't Outlook users edit the subject line of incoming emails?

Precisely my frustration with the "NEW Outlook" multiple features like this that I can no longer do anymore. There are a few features I do like and I like the simplification of many things, but a big disappointment when I can no longer keep the same process I have been doing for many many years (As I am new to the "New Outlook" I am continuously finding things I cannot do), to name a few:

• Editing Subject lines (Sorry but categorizing is NOT enough)
• Quick steps (Can't even setup a process to send multiple emails??? this is a huge feature for many, now gone!)
• Templates changed (Erg...)
• Simplified Ribbon is great... BUT cant add certain features most would want to??? (Constantly having to switch between Classic and Simplified, annoying)
• Delete function takes a full inch of space on each message of the inbox (Why can't I minimize that space? or why is it not already minimized?)
• This list seems to be growing as I am repeatedly disappointed in some of the changes
• Still happy to use MS Outlook / still better than most experiences but frustrating to see some of the changes.

Not being able to edit the subject on emails is a big setback. Not sure who decided this would no longer be available but they did not think of users. Not good for Microsoft to just make a change that is detrimental to customers.

I cannot even drag the message out of Outlook anymore.

This is a TOTAL nightmare. There must be a way they can sort this out.

Amongst other things, we need this option on our systems for Data Protection Reasons.

Ever since the "New Outlook" was released, MSoft has been pushing for all users move to this new version. When I first tried it, I noticed that the New Outlook would not allow me to edit the subject line for any incoming emails. Therefore, I DID NOT switch over. Today I realized that even in the legacy Outlook, this feature is no longer available. MSoft makes us believe it's available, but after about a minute or so, the edits just vanish.

This has worked for me with every MS email program I've used in the last 25 years. Try it.

Make the outlook window smaller than the Desktop.

Drag the message from Outlook to the Desktop.

Open that message with Notepad or another text editor.

Edit the Subject and anything else you want to edit.

Save as EML.

Drag the message back into the Outlook folder you want it in.

You should now have 2 versions of the message, the original and the edited.
