I understand your concern about the New Outlook for Windows. However, Microsoft is committed to providing the best user experience and continuously improving its products.
If you prefer to use the Legacy Outlook, you can still access it by downloading and installing the standalone version of Office 2019 or Office 2016. Please note that Microsoft will eventually stop supporting the Legacy Outlook.
This will prevent the New Outlook from opening automatically, and you will be able to continue using the Legacy Outlook. Please note that Microsoft may eventually discontinue support for the Legacy Outlook, so it is recommended to transition to the New Outlook for the best experience and support.
Secondly,
Depending on your outlook/windows version and old data on your computer you might not find the settings or options like others do.
From the description provided you would like to turn off "New Outlook" and go back to the "Lagacy" Outlook.
Let me know if you can see the toggle button that would allow you to do this.
If not, then on top left corner you will see Help. Select > Help > Go to Classic Outlook.
This issue may have been caused by settings in Outlook that need to be changed. Or it may also be a problem the email account you are using with Outlook. So, let us work together as a team to get to the bottom of this. But to better assist you I need to ask:
- What version of Office are you using? Microsoft 365 Personal? Microsoft 365 Family? Office 2016? Office 2019? Office 2021? I specifically need the Product name and Version number as highlighted in the guide and photo below.

2) What email accounts have you added to Outlook? You don't have to tell me the actual email addresses. I just need to know if it's @Outlook.com or @Gmail.com or @Yahoo.com or something else.
3) What email protocol are you using with the email account you added in Outlook? Post Office Protocol 3 (POP3)? Internet Message Access Protocol (IMAP)? Microsoft Exchange? To know which protocol you’re using from Outlook, click the File tab, you’ll get a window similar to the photo below. The item highlighted in red is the protocol which in this case is IMAP.

4) What version of Windows are you using? We specifically need the edition and version number of Windows your device is running. To find out which version of Windows your device is running, press the Windows logo key + R, type winver in the Open box, and then select OK. You'll get the window below and we need the information highlighted in red.
