There is a batch file called 'OutlookRemover' that you need to download on your PC to get rid of the new Outlook and permanently restore the Mail and Calendar app. You candownload the batch file here from GitHub. Next, unpack the ZIP file and run the outlook.bat batch file as an admin. And that's pretty much everything that's required of you to bring back the Mail and Calendar app
This script prevents the Outlook (new) app from installing by installing a custom blank app with the same package id as the original one, thus making it´s installation fail. To do this, it enables the developer mode via registry and registers the modified New Outlook manifest as an unpacked Appx package.

When you download the zip file extract it and run Outlook.bat file as administrator (right click on file and "run as administrator")
I am not sure how much longer I am willing to waste time to keep Mail up and running the next time this happens. Hopefully this works for a long while. This starting to fell too much like pirating software. That's almost the allure to this. I am too stubborn to give up. I am sure I would be far happier with Thunderbird and save time, but what is the fun in that.
I have given it a try. So far so good. Use this advise at your own discretion. No warranty is given.
