Using Classic Outlook on Windows for personal email, calendar, and contact management

As per your mentioned description about "The new update on OUTLOOK mail, is terrible". If you are using Outlook for office 365 kindly check with below steps check if it will make difference: kindly go to File-->Options-->Advanced-->Uncheck Shows Apps in Outlook, then restart your outlook or close outlook and open it again.
Or if it changes to new outlook kindly uncheck try the new Outlook make sure that is off. then restart outlook check if it will make any difference.
If you want dark background, kindly go to File-->Office Account-->under office theme choose Black
Also, Have you tried steps in this article, How to revert to an earlier version of Office (microsoft.com)? There are 3 steps to revert to the previous version of office:
- Step 1: Set a reminder to enable automatic updates at a future date.
- Step 2: Install the previous version of Office: Check and download the version you want from Update history for Microsoft 365 Apps for enterprise (listed by date)
- Step 3: Disable automatic updates for Office.
If you don't have above options, would you mind to kindly provide the screenshot of the outlook version, are you using? Kindly go to File-->Office Account. this will help us to guide you how you revert back to previous outlook.
