I started using the new Outlook yesterday and it mirrored my current Outlook which was great. My current Outlook, in order from left to right, has my folders, inbox, reading pane, and daily calendar on the far right. Now this morning the daily calendar on the far right is missing. I have been all over the app and cannot locate where I have the option to add it back to the view. I see where I can modify the reading panes but that is it. Help?

You need to change the scale of your entire screen (under the Display settings). I was at 300% and changed to 250%, now the My Day panel is pinned and doesn't cover the Reading Pane.
I really did not expect the toggle to be at the top like that, thank you so much.
