Where can I find the below setting when I'm in the "New Outlook" mode:
If you prefer, you can disable dark mode so that the message window is always white when using the black theme. The icons to switch dark mode on or off are disabled when you disable dark mode.

Man this is SO stupid. I use a Mac and on the new Outlook for Mac when you click the sun to say switch to light background, it does it for ALL emails moving forward. Yet the new Outlook on Windows makes you do it every time. It's SO frustrating.
My organization just switched to opting into the New Outlook and this is still an issue. Will be switching back to the old version until this is fixed which I can do thankfully.
I've got the same issue, I can change to light background for individual messages by clicking the sun symbol
And the background goes white
But I have to do this for EVERY email, even reopening the same one it'll default back to a dark background.
It's feasible as the white background in dark mode works, so shouldn't be too hard to make a setting of Light Theme/Dark Theme AND Light Background/Dark Background as default settings.
