Using Classic Outlook on Windows for personal email, calendar, and contact management

Based on my test, i found that the same result as yours. I'm afraid that this feature is not available in New Outlook preview. Please kindly understand that many functions of our current products are designed and upgraded according to customer feedback. At present, what I can do for you is to provide a workaround. Based on my tests, you can try to use below method to capitalize the letter i:
You can change the case of selected text in an email message by clicking the Change Case button.
- Select the text for which you want to change the case.
- On the Format Text tab, in the Font group, click Change Case.
- Choose an option from the list, which includes Sentence case, lowercase, UPPERCASE, Capitalize Each Word, and tOGGLE cASE.
- Choose Sentence case. Then the letter i will change to I.
Notes:
- You can also change case by using a keyboard shortcut, press SHIFT+F3 until the style you want is selected.
