I noticed that all my calendars were gone in the Android calendar app and found the reason is, for some reason, the option to sync calendars for my outlook.com account has been turned off in the Outlook app. I turn it back on and within minutes my calendars are populated again, but then hours later it gets turned off again. This started happening in the past few weeks.
Anyone else having this problem?

I'm turning it Unrestricted now, hope it helps, thanks for the tip.
Same issue for me...outlook "sync calendar" is shutting off for my Office 365 account. I turn it back on and it stays for awhile and then disappears from Calendar on Android phone. Very annoying!
I have tried resetting, haven't deleted app and re-installed but I see that others have tried that in this thread with no success.
Unfortunately, I already had Outlook set to unrestricted and it still disables calendar sync multiple times per day. Interestingly, I have 2 accounts and the sync gets disabled at different times for each. So usually, one is turned off and the other is turned on, then an hour or so later it's reversed. If I wait long enough, sync will get disabled for both accounts.
