I currently have several signature saved and they still show up as an option to use. However, if I go to edit any of them, one one comes up as an option to edit. The other signatures that I can use no longer are in the list. I would usually have about 20+ to choose from and edit. It is only showing my default signature

It's possible those signatures are saved to the device rather than your account: under 'Signatures and Stationary' select the dropdown box next to 'E-mail account'. Select 'Signatures on this device' and see if they appear there instead.
Thank you, Simbarashe. This (deleting the old one from here: C:\Users(username)\AppData\Roaming\Microsoft\Signatures) solved my issue. It has been an annoyance for months. I read several other posts and nothing worked...until you. Thank you very much!

So, I had this issue this morning. After a W10 to W11 upgrade many outlook features stop working correctly, being this one of them.
This worked for me: Going to C:\Users<username>\AppData\Roaming\Microsoft\
And then in "Signatures" folder properties, removing the "read only" check box (even if checking again seems to be no change).
Then suddenly me signatures are editable again.

I have since discovered that going to the Settings cogwheel, then typing Email Signature into the search bar within the Mail folder and clicking on the drop-down result takes you to the Signatures page where you can freely edit.
