I currently have several signature saved and they still show up as an option to use. However, if I go to edit any of them, one one comes up as an option to edit. The other signatures that I can use no longer are in the list. I would usually have about 20+ to choose from and edit. It is only showing my default signature

You are a hero... This was the solution. Microsoft support is usually pretty useless. They just repeat back your problem and copy and paste the steps that anyone could find with a simple Google search. If those solutions actually worked we wouldn't be wasting our time asking in a forum.

HOW TO UPDATE EMAIL SIGNATURE IN OUTLOOK - March 6, 2024
Go to Settings (the cog is located at the top of the screen, far right on the blue navigation ribbon)
Type "email signature" into the Search settings box. Click the link that appears.
Make changes
Save
*I tried to upload instructional screenshots in multiple formats, but couldn't
On the Select Signatures look for the hidden ones on the dropdown list and you will also find "Signatures on this Device"
Navigating to my C drive to the folders specified above allowed me to see all my signatures and I was able to delete the old ones from there. Now they do not show up in my list of options in Outlook!
