I found a hack until they fix this.
I select all in my inbox and then click read/unread to see unread total in inbox then select read to go back to normal.

In the latest update of Outlook for Mac I can no longer see a count of the number of emails in my inbox. Is there a way to get it back?

Yeah, but I sometimes mark emails as unread as an indicator that action is still needed. If I mark all unread, I can't "undo" and return to the previous separation. I've lost the delineation. Not a hack that works for me.
