Is the only way to resolve this to create a new profile? I already have an email profile configured with five email addresses configured in it. I don't want to recreate them all again.

This was also an issue for me where 'Full Name' was greyed out. This appears to be a bug on the 'New Outlook' for Mac. If you go to Help > Revert to Legacy Outlook and edit the account settings, the 'Full Name' field is no longer greyed out and you can edit it.

Reverting to legacy mode is not a solution. why loose all the new features.

Microsoft should just fix this bug. Not sure how many replies they need to this thread for them to take action?
