When I switch to the new version of Outlook on my Imac, my name from my imap account will be changed to my e-mail address.
How can i resolve this?

Really Microsoft? I've been staring at this same issue for well over a year and still no fix for it? I'm trying to like you Microsoft but you're making it really difficult for me to stay in this relationship. No matter what I try, I cannot find any reliable fix to simply change the outgoing name on my emails and there is no where intuitively obvious that I can see to fix it. Deleting and recreating the account doesn't work. But then again, should I really have to go through all that headache to fix something that should work in the first place and that I'm paying for? Get with the program Microsoft.

Try Mailbird as well. Guys are developing next major version (with MacOS support) - https://nextsupport.getmailbird.com/hc/en-us. It is in closed beta at the moment.
We have the same and many other problems with Outlook. Too tired to keep fixing them. We have decided to use Thunderbird instead of Outlook. Thunderbird works perfectly well and all our e-mails are with easy to configure account name.
Unfortunately, it isn't unbelievable. Most microsoft software & indeed hardware is utter garbage.
