I'm having the same issue over the last few days. Randomly some task categories disappear, but not all.
I checked my Outlook client and there are no COM Add-ins to disable.
I do have my Office 365 Outlook tasks go to my iPhone, however I don't do anything with them there. I did disable the "reminders" in the iPhone Exchange sync, just to take it out of the equation.

4/7/20 10:30 am. On iphone settings, reminders, turned off notifications. Checked that icloud synching is off. I re-categorized everything.
4/8/20 77 categories lost, at 9:00 this morning.
OMG! Will this ever be resolved?! I'm looking for suggestions.
I personally have apple watch and I use it a lot to add tasks (basically this is way I got the watch for)
I solved this issue by turning off the synch with iPhone tasks, it is working now.
Same here, every morning around 9 am, it's not all of my tasks, just a hundred or so, the strange thing is, when I mark all of them to be put back into a category, they sync with other shared categories.
Way frustrating. I don't think this has been a long term problem, just a couple of weeks? But I've been reading this thread, trying to resolve it. Did the IOS update to my iphone. Deleted Reminders entirely from my iphone. Still having problems. The hint that it is a 9:00 every morning event seems to be true. Yes I do have an apple watch.
I think I spoke too soon. I happened to look at about 09:10 this morning and noticed that all categories on Tasks due today had disappeared again. So obviously not fixed, even though everything has been fine for a week.
One thought - does anybody else with the issue also have an Apple Watch? I had been having sync'ing issues with my Watch ever since the upgrade to iOS 13.4/WatchOS 6.2 last week, but these seemed to resolve themselves yesterday (I removed a large number of "completed" Tasks which may or may not have fixed my sync'ing problem). And then today the categories disappeared at 09:00 again - coincidence?
