My calendar has shifted all of my meetings over 1 day. For example, all of my meetings today 3/4 appear to be on 3/5 but my office still has them on 3/4. I have restarted my computer and teams and this has not been resolved. Thinking this could be a Leap Day error.

Guessing this might have had something to do with Leap Year.
Thats not a fix. i have meetings on the weekend as well.
This seems to be the real fix, if you just switch it to week, it would be a temporary fix for those that don't have meetings on the weekend. I switched over to the new version and no longer have the problem.
