I'm having similar issue since MS Office update on 1/11/22. I'm running on beta MacOS 12.2 Beta (21D5039d).

Word and PowerPoint work fine but Excel will not open at all. If I download the 2016 version it works but as soon as I run auto update the problem returns.

Same issue as of this morning's update. Tried running the suggestions on the MS Mac Excel problems page but they did not help (https://support.microsoft.com/en-us/topic/excel-for-mac-error-the-application-microsoft-excel-quit-unexpectedly-462f7d44-feb1-ecfa-f9c4-c899917eda64). Downloaded new version of Excel from web but problem persisted.

Here is what worked for me to FIX the issue (rolling back to an earlier release of Excel but not changing the other apps. Thanks to the user who posted this on another thread:

    Thanks a lot!

This worked and saved me hours. Here's what I did

    1. Dragged Excel App from Applications folder to Trash
    2. Downloaded Excel (16.57) from https://docs.microsoft.com/en-us/officeupdates/update-history-office-for-mac
    3. Unchecked Auto-update to avoid Excel getting updated to buggy version
    4. Restart

    Boom! >>

Problem was Office 365 beta update (16.58.22011705). Rolling back to Excel 16.57 did the trick.

    Hi

This was fixed in an update.

Open Microsoft Word or PowerPoint, then go to the Help menu and choose Check for Updates to get the update.

Please post future questions and comments about beta builds to the main forum heading called Office Insider. That forum is designed specifically for beta builds.

    Thanks
