How to get Word for Mac (16.8) to open documents in draft mode

I updated my version of Word for Mac this week and now whenever I open a Word document, it opens in print layout. I want it to open in draft mode, as it did before the update. 

Additionally, my template for most documents no longer opens. I've read half a dozen sets of instructions about how to create a template in Word, but none of them seem to "stick."

    I think Microsoft may have changed the default location for Normal.dotm
