Latest desktop update (2401) only has a "white" theme?

Blinding and hard to read.

Am I missing something?

Same here. The only Classic themes I can see are the White square and the Blue square. Very boring!

What do we have to do to see all of the other options?

We recently updated to MS365 and while I have set my theme preference to a "dark gray" theme with the option "never change the message background-color", several times a day the theme reverts to "use system setting".

How do I correct this very annoying issue?

I disagree with the above screenshot; mine Only has the modes and then "Classic Theme" which consists of white if you're in Dark mode and BRIGHT ROYAL Blue if you're in light mode! And it's awful!
