I updated to MacOS Catalina and now I cannot share my app screens. I can share my desktop, but that is all others can see.

My system had an entry (unchecked) for Microsoft teams. I think it asked me as I was launching but I blew by it. Not sure how you'd add it if it's not there. You just have to turn it on, and Teams screen sharing will work.
If you are not seeing the option under system preferences and have confirmed you are able to share your screen under the web browser option. Go back to the desktop and log out of Teams, shut the app down, log in again and try sharing your screen. You should see the request show up in preferences now.

There was no option to switch to dev preview, but the workaround that works for me was leave the security and privacy window open and try screen share and it worked
Am experiencing a similar issue. A work around is to use the web-based Teams app.
Both putting Teams into fullscreen mode and this served me as a solution.
Fullscreen mode was a workaround, but even with Catalina 10.15.6, an MDM and the latest version of Teams, this one was the final solution.
