I upgraded to Windows 11 and reverted back to Windows 10. Now Windows 10 automatically attempts to download and install Windows 11 again. See below:
I can Pause Updates but doing so doesn't allow me to update Windows 10 "patches." I'm being forced to Upgrade to Windows 11 without the ability to stop it.
I want to cancel the Upgrade to Windows 11 (download/installation) process which initiated on its own without my consent. The current status is how it shows in the image above - ready to download and then install Windows 11 but there is no way to stop it.

You could very well be correct. That was my interpretation of the MajorGeeks' article and information I have read in the past about Windows 10 and updates. I hope someone with a definitive knowledge of this would jump in here.

It is my understanding that the process you point to will only let you pause or delay the upgrade for a fixed time. (In this case up to a year). For those users that want to block the upgrade to Win 11 until they chose, we need a more permanent solution.
I don't believe that is the case. MajorGeeks does say it only hides the update until the next windows update but according to Microsoft Here"If you like to install the update in future then you can unblock it. Run the "Show Hide updates" utility again and select the 'Show hidden updates' and unblock the hidden update." It doesn't suggest any amount of time it is delayed.
I have been using this tool since early Windows 10 and haven't dealt with any hidden updates return (though I could have simply not been aware of their return).
If you are right, I would certainly like to know that.
I believe this tool does exactly what the built-in "Hide Update" feature did in Windows 7 updates which was to hide the update until the user manually unhid the update.

I found a solution to stop the Windows 11 upgrade after it has begun. Note that his will only work AFTER the update has shown up in your list of current updates and BEFORE it has completed.
All you need to do is run the "Show or Hide Updates" tool by Microsoft. It will scan for current updates and show you Windows 11. Check the box for Windows 11 and then continue. When it finishes, reboot and you're done.
